Deep and Very Delicious Pizza on the Kamado

This is a easy homemade pie using the Urban Slicer Deep Dish Pizza Kit. The beauty thing is, the kits are just add water, let rise, assemble, then cook, a fun, easy way for pizza anytime.
1 Urban Slicer Deep Dish Pizza Kit
1 Can Urban Slicer Pizza Sauce
Pepperoni Slices
Shredded Mozzarella
Italian Sausage ground or whole
Provolone Slices
Your Pick of Vegetables
Start by adding exactly one cup of warm water 110 degrees fahrenheit to a mixing bowl or your stand mixer. Add in the flour mixture, (Marklan's Note: Now sometimes I've found the yeast in the dough to not be active, so I usually add a tsp of yeast into the water, and let it bloom first) Mix your dough until its smooth and elastic usually kneading for about 8 minutes. Rub some olive oil in your bowl, and set the dough somewhere warm to let it rise for 2-4 hours covered with plastic wrap. The oven with the light on is a good place. After the dough has risen to double its size, choose whether to make two smaller pies, or one larger

Roll the dough out and place in a greased deep dish pan, making sure the dough is up the sides of the pan to hold your toppings in.
Let it rest again for another 30-60 min while you preheat the grill. (Marklan's Note: this recipe can be used on all grills, gas, charcoal, pellet, or even your oven. Get the kamado going, and open the vents all the way, for maximum air flow to get that temperature up to about 450-500 degrees.

When the grill is up to temp, you can choose to use it to cook the sausage, or cook it on the stove top so you can drain some of the grease off it.

Cook it partially, as it will continue cooking on the pizza, but make sure to drain that grease, no one wants a soggy, greasy pie at the end.
Now for the fun part, assembling the pizza.
Lay down the provolone slices on the bottom of your pizza, followed by a layer of pepperoni, then the sausage, and your veggies. You maybe wondering, Hey what about the sauce, and the rest of the cheese, while that comes later believe it or not. I'll get to it. When the assembly is complete place on the grill and let'er go.

Cook the pizza for about 10-15 minutes, open the lid and sprinkle in all that mozzarella over top and place a small cast iron saucepan, with the tomato sauce on the grill beside the pizza. Continue cooking for another 10-15 minutes, when you have the desired crispiness of your crust pull it off and let it cool for a few minutes before removing from the pan and slicing it up. Serve with the hot tomato sauce spooned over top, or on the side for dipping.
